Ingredients
1 kg Chicken pieces (cleaned properly)
2 medium Onions, chopped
2 medium Tomatoes, chopped
1 tbsp finely chopped Ginger
1 tbsp finely chopped Garlic
Chilli powder - 1 tbsp
Coriander powder - 1 tbsp
Garam masala powder - 1 tsp
Turmeric powder - 1/2 tsp
Coconut pieces - 1/2 cup
Curry leaves
Salt according to taste
Oil
Method
1. Roast all the masala powders in a pan and keep aside.
2. Marinate the chicken pieces with the roasted powders and keep aside for 1 hour.
3. In a deep bottomed vessel, saute the onions, garlic and ginger well. Add tomatoes and curry leaves and cook for few minutes.
4. Then, add the marinated chicken pieces along with salt, coconut pieces and little water and mix well.
5. Cook until the chicken is done and gravy becomes thick.
6. Garnish with coriander leaves.

Easy & Spicy Chicken Fry
Ingredients
Chicken thighs/legs - 1 kg (de-skinned and cleaned - Boneless chicken can also be used)
Ginger-Garlic paste - 1 tbsp
Kashmiri chilli powder - 1 tbsp
Chilli powder - 1 tsp
Pepper powder - 1 tsp
Coriander powder - 1 tbsp
Garam masala powder - 1 tsp
Turmeric powder - a pinch
Slit Green Chillies - 8 nos
Vinegar - 1 and 1/2 tbsp
Curry leaves - tons of them
Salt according to taste
Coconut oil
Method
1. Marinate the chicken pieces with all the powders, ginger-garlic paste, salt and vinegar and refrigerate for 1 hour.
2. In a non-stick pan, add coconut oil, tons of curry leaves and the green chillies. Then add the marinated chicken pieces and shallow fry.
3. Turn both sides until brown and serve hot!

A very quick and easy dish on a very lazy day! :D

Mutton Curry
My cousin bro, Prijoe, taught me how to prepare this dish and after he did, this curry has been a main attraction at our home almost every week! :)
Ingredients
Mutton pieces - 1 kg (cleaned properly)
3 large Onions, thinly sliced
2 large Tomatoes, sliced in quarters
1 tbsp Ginger, finely chopped
1 tbsp Garlic, finely chopped
2 medium Potatoes, chopped and cooked (optional)
Chilli powder - 1 and 1/2 tbsp
Pepper powder - 1 tsp
Coriander powder - 1 tbsp
Garam masala powder - 1 tsp
Cardamom - 2-3 nos
Cloves - 2-3 nos
Cinnamon - 1-2 sticks
Cumin seeds - 1 tsp
Dry red Chillies - 8-10 nos
Mustard seeds
Curry leaves
Salt according to taste
Oil
Method
1. In a thick bottomed vessel, cook the mutton pieces in water with a pinch of turmeric. Let it cook until the mutton fat floats on top of the water. Remove the fat, strain the pieces and keep them aside.
2. In a pressure cooker, add oil. Add cumin seeds, cardamom, cloves, cinnamon and fry for few minutes.
3. Add onions, ginger, garlic, few dry red chillies and saute them well until transparent.
4. Add all the powders and roast well. Then, add the cooked mutton pieces along wih sufficient water, mix well, close with lid and pressure cook for atleast 3-4 whistles (this depends on the mutton you use).
5. Then remove the lid and add the sliced tomatoes and cook until the gravy becomes thick. You can add the cooked potato pieces at this stage. If you need more gravy, add more hot water and let it cook for a while.
6. Finally, in a pan, add oil and when hot, add mustard seeds, rest of the dry red chillies along with curry leaves and fry for few minutes.
7. Add this to the cooked mutton curry and mix well!

Chicken Whole Legs Masala Curry

Welcome to the First Post on my blog! I'm super excited! :D I am a fan of easy and quick recipes :) I normally do not opt on cooking dishes that are difficult and time consuming. Hence, here you go! My Amma's very own Chicken Whole Legs Masala Curry! :)
Ingredients
Chicken Whole Legs - 6 pieces (de-skinned, cleaned and slitted)
2 large Onions, chopped
2 medium Tomatoes, cut into medium pieces
Ginger - 1 tbsp finely chopped
Garlic - 1 tbsp finely chopped
Chilli powder - 1 and 1/2 tbsp
Coriander powder - 1 tbsp
Pepper powder - 1 tsp
Garam masala powder - 1 tsp
Cumin powder - 1/2 tsp
Turmeric powder - a pinch
Curry leaves
Salt according to taste
Oil
Method
1. In a non-stick deep bottomed vessel, add little oil and saute onions, tomatoes, ginger, garlic and curry leaves well.
2. Take half of mixture (mainly the onions) and keep it aside.
3. Roast all the powders together in another pan and then add it to the remaining mixture in the vessel.
4. Add cumin powder, salt, chicken whole legs and salt and mix well. Let it cook until done.
5. Grind the onions mixture that was kept aside into a semi-watery paste.
6. Once the curry is almost done, add this paste into the curry and mix well. Let it cook for somemore time and switch off the flame.
7. Serve it with chapathis/naan/bread!
This recipe turns out great with Chicken Whole Legs. You can also try it with any other chicken pieces as well! ENJOY! :)
